  2. Yum, I love the sound of these Chickpea Avocado Salad Sandwiches. I have to admit Shashi that when I first read the title of your recipe I read it too quickly and thought it said “CHICKEN Avocado Salad Sandwiches”. Now, with CHICKPEAS, I think that adds a whole new dimension. And as you say, Vegan too. (Not that I’m Vegan but it’s always good to have that choice!). What a unique filling, and that delicious Dave’s Killer Bread looks like the perfect sandwich bread for these!

  3. I’m actually traveling at the moment, Shashi, and I know all about being hungry when you’re heading off to grab a flight! And I do anything I can to avoid buying over-priced airport food, too. This open-faced sandwich idea is perfect for when you’re in a rush, but still need something filling. I often eat a piece of toast with a scrambled egg for lunch when I’m at home, but I might need to stock up on my avocado and chickpea stash. This looks amazing! And I have indeed seen Dave’s Killer Breads in the store. I’ll grab some on my next trip!

  5. This sounds SO good! I’ll bet that it’s fantastic on this type of bread, too. I also bet that it packs well. We’re having some great weather this weekend in Chicago … maybe I’ll take it to the beach!

  6. Gah, I love this recipe idea Shashi. The ginger and garlic sound amazing (and love that you used the word rivulets to describe the flavor.) Dave’s is my #1 bread for sure. I haven’t seen the thin sliced yet though. I will have to look for that.
