Easy Chickpea Avocado Salad Sandwich
This lusciously creamy, ever so slightly spiced, accidentally vegan, Chickpea Avocado Salad pairs so well with the hearty, subtly sweet, seed-coated crust of Dave’s Killer Breads 21 Whole Grains and Seeds, making for one filling and flavorful Easy Chickpea Avocado Salad Sandwich!
So, let’s say you have a cross country, lunch time, flight and you are borderline hangry…
What do you do?
Do you stuff your carry-on with as many dry snacks as you can?
Do you pick up an overpriced lunch at the airport?
Or, do you try and whip up something filling and healthyish and scarf it down in record speed?
Well, a couple of weeks ago, my daughter and I were hustling to catch our afternoon flight to Seattle when we were interrupted by a rumbling akin to far-off thunder.
I was going to brush it off and hurry on out the door to try and get ahead of what seemed like an impending storm (or so I thought), when my daughter informed me that the “thunder” was coming from her belly!
Well, we had pretty much emptied our fridge out the night before, except for a lonely avocado, an onion, a lemon, and a couple of loaves of Dave’s Killer Bread 21 Whole Grains and Seeds.
From sandwiches to take on hiking trips to cardamom french toast on a rainy Sunday morning before we head to church, my daughter and I have tried several varieties of Dave’s Killer Bread.
Just before our trip, we headed to the store and picked up a couple of loaves of the 21 Whole Grains and Seeds variety of Dave’s Killer Bread to have around when we got back from our trip.
But, we decided to open up those loaves and make some easy sandwiches with what we had lingering around – and that’s how this Chickpea Avocado Salad Sandwich happened.
That afternoon I didn’t have time to pull out my camera and set up my boards and all to take these shots, so when we got back over the weekend I remade those Chickpea Avocado Salad Sandwiches to share with y’all today (a welcome excuse to enjoy those Chickpea Avocado Salad Sandwiches again).
I hope you don’t mind if I stop for a second and ruminate on that Chickpea Avocado Salad – it was lusciously creamy with just a hint of heat, it was filling, and sooooo flavorful – thanks in large part to the grated garlic and grated ginger in it! Grating that garlic and ginger were the key to rivulets of flavor meandering uniformly throughout this salad.
Paired with the hearty texture, subtle sweetness, and seed-coated crust, if the 21 Whole Grains and Seeds variety of Dave’s Killer Bread, it made for one heck of a hearty and delicious sandwich that didn’t weigh us down or make me wanna take a nap on our drive down to the Atlanta airport.

Ingredients
- 1 ripe avocado chopped
- 1/2 red onion chopped fine
- 2 tsp fresh lemon juice
- 2 small gherkin pickles chopped
- 1/2 inch chunk of fresh ginger grated
- 1 clove garlic grated
- 1 can chickpeas drained and rinsed
- 1 tsp chili flakes
- 2 tsps parsley
- 1/4 tsp each salt and pepper
- 1/2 tsp smoked paprika
- 6-8 slices Dave’s Killer Breads 21 Whole Grains and Seeds
Instructions
- Add the avocado to a bowl and mash it up using a fork.
- Add in the chopped red onion, lemon juice, chopped gherkin pickles, chickpeas, chili flakes, parsley, salt, pepper, and smoked paprika.
- Using a grater, carefully grate the garlic and ginger into the bowl as well.
- Using the fork, mix up the ingredients.
- Toast up the slices of Dave’s Killer Bread 21 Whole Grains and Seeds, spread them with the Chickpea Avocado Salad, garnish with more parsley and/or chili flakes, and enjoy!

Yum, I love the sound of these Chickpea Avocado Salad Sandwiches. I have to admit Shashi that when I first read the title of your recipe I read it too quickly and thought it said “CHICKEN Avocado Salad Sandwiches”. Now, with CHICKPEAS, I think that adds a whole new dimension. And as you say, Vegan too. (Not that I’m Vegan but it’s always good to have that choice!). What a unique filling, and that delicious Dave’s Killer Bread looks like the perfect sandwich bread for these!
I’m actually traveling at the moment, Shashi, and I know all about being hungry when you’re heading off to grab a flight! And I do anything I can to avoid buying over-priced airport food, too. This open-faced sandwich idea is perfect for when you’re in a rush, but still need something filling. I often eat a piece of toast with a scrambled egg for lunch when I’m at home, but I might need to stock up on my avocado and chickpea stash. This looks amazing! And I have indeed seen Dave’s Killer Breads in the store. I’ll grab some on my next trip!

This sounds SO good! I’ll bet that it’s fantastic on this type of bread, too. I also bet that it packs well. We’re having some great weather this weekend in Chicago … maybe I’ll take it to the beach!
Gah, I love this recipe idea Shashi. The ginger and garlic sound amazing (and love that you used the word rivulets to describe the flavor.) Dave’s is my #1 bread for sure. I haven’t seen the thin sliced yet though. I will have to look for that.
