When it comes to curry, I can whip up a pretty tasty, Sri Lankan-ish one within 40 minutes or so. Curry with roti or rice is my idea of comfort food.

Usually, I choose ingredients I can easily find at my local grocery store or online to make my Sri Lanka-ish curries. Usually, those ingredients are on the wholesome, nourishing side as well.

But, when it comes to making an authentic Indian or Thai curry, I’m clueless. Most times when a craving for Indian or That food hits, my daughter and I usually check out a local restaurant.

But, these days, I’ve been weary of picking up takeout food from anywhere. The extent of my consumption of pre-made food has been frozen pizza from the grocery store!

Recently we’ve been finding gastronomic solace in this lentil curry and roti. We’ve made this combination so many times, my daughter can make them without looking at my recipe!

Then the other day, as we walked through The Fresh Market, we were talking about The Chef’s Table and I was hit with a craving for Thai!

I tried to suppress it ~ and I was succeeding quite well. At least that was until I came across Blue Elephant Royal Thai Cuisine Yellow Curry Sauce!

Armed with two packages of Blue Elephant Royal Thai Cuisine Yellow Curry Sauce and a package of Blue Elephant Jasmine rice, I decided Thai was going to be on the dinner menu.

As I had some frozen Mahi Mahi steaks in my fridge, I decided to cook it with the Blue Elephant Royal Thai Cuisine Yellow Curry Sauce.

Easy Steps to Make this Thai Yellow Curry with Mahi Mahi

Now back to this Thai Yellow Curry with Mahi Mahi.

I started off by preparing the rice according to package instructions. As the rice cooked, I began sautéing a yellow onion in some olive oil.

Then I added in some ginger, garlic, carrots, and celery. To this I added in a pouch of the Blue Elephant Royal Thai Cuisine Yellow Curry Sauce and brought it all to a low simmer.

At this point, I added in two fillets of thawed Mahi Mahi. I covered this yellow curry concoction up and let it simmer over medium heat for about 10 minutes.

My daughter and I immensely enjoyed our dinner of rice and Thai Yellow Curry with Mahi Mahi. Comforting and super quick, this curry helped quell my Thai food craving.

Blue Elephant Royal Thai Cuisine Yellow Curry Sauce makes it so easy for me to quickly whip up this delightfully delicious, restaurant quality Thai Thai Yellow Curry with Mahi Mahi.

Ingredients

  • 1 onion
  • 2 cloves garlic
  • 2 tsp ginger
  • 2 carrot
  • 2 stalks celery
  • 1 pouch Blue Elephant Royal Thai Cuisine Yellow Curry Sauce
  • 2 mahi mahi fillets

Instructions

  • Saute onion with olive oil over medium heat for about 10 minutes. Make sure to stir often so onion does not burn.
  • Add in the ginger, garlic, carrots, and celery and stir well.
  • Also add in a pouch of the Blue Elephant Royal Thai Cuisine Yellow Curry Sauce and water (per package directions) and bring to a low simmer.
  • Then add in two fillets of thawed Mahi Mahi.
  • Put a lid on the pan with the yellow curry concoction and let it simmer over medium heat for about 10 minutes.
  • Garnish with parsley and/or chili flakes and enjoy with rice.

Notes

*This meal results in a lot of yellow curry sauce, so, if you would rather make 4 fillets instead of 2, you can very easily do that with plenty of Thai yellow curry sauce for 4 servings.

    Wow, this sounds amazing, Shashi! Laura makes a delicious Thai green curry that she “doctors” from a canned version. We have to go down to a special ethnic grocery store to get it, and we can’t even read the label! I’ll totally have to try this one from Blue Elephant now. Like you, I’m clueless when it comes to Thai food – Laura has way more experience than me there. And she usually adds chicken, but I love the mahi mahi idea. Totally going to look for Blue Elephant at the store today – perfect timing!
