I can make a meal of this Easy Oven Roasted Vegetable Salad with Egg. It is filling, so incredibly delicious, and it’s so easy to make.
In this oven roasted vegetable salad, sweet beets, sweet potatoes, broccoli florets, and onion are slathered generously with a garlic and harissa oil. These vegetables are then baked until they are tender. As the vegetables soften, the grated bits of harissa-spiced garlic in the oil tend to crisp up. When you scoop up a spoonful of this, each forkful is filled with flavor.
What makes this Easy Oven Roasted Vegetable Salad with Egg so good?
I love this Easy Oven Roasted Vegetable Salad with Egg as it’s:
- Flavorful
- Veggie-packed
- Filling
- Comforting
- Nutritious
- Versatile
- And, so darn delicious

What are the ingredients needed to make this oven roasted vegetable salad?
I use the following 8 main ingredients, along with salt and pepper. And sometimes also add in some parsley and chili flakes for garnish.
- Beetroot
- Broccoli florets
- Sweet potato
- Onion
- Garlic cloves
- Harissa
- Olive oil
- Eggs

Instructions
- Preheat oven to 400 degrees Fahrenheit.
- Peel and chop the beetroot, sweet potato, and onion into bite-sized pieces. Chop the broccoli into bite-sized pieces, too. Arrange these onto a sheet pan lined with aluminum foil.
- Place the olive oil in a bowl. Peel the garlic and grate it into the olive oil. Add the harissa to the olive oil and garlic mixture and mix well.
- Brush this spiced olive oil onto the vegetables or drizzle it onto them and toss the vegetables so they are well coated.
- Bake at 400 degrees for 40 minutes
- While the vegetables roast, boil the eggs to your preference.
- Remove the vegetables from the oven and season with salt and pepper. Then, place them in a bowl or divide among 4 plates.
- Chop the eggs and add them to the roasted veggies or serve on the side.
- Garnish with parsley and chili flakes, and enjoy.

Warm Salads and Cold Weather
Way back during my freshman year in college, I happened to get into a conversation with an older gentleman on a bus. The conversation got around to the weather, and he shared that every time he was in a place where the lowest temperature was lower than his age, he would move! Just like that – he would pick up and leave!
Now, I don’t quite remember his name or exactly what he looked like, but that line has fascinated me ever since! Every time the temperature drops here in Georgia, and my Sri Lankan-heat-loving-roots start showing, I often ruminate on his “musings” – and wish I could click my heels together and be transported to somewhere warm, at least for just one day!
But then my daughter reminds me that we have fleece pants and tops, and we can sit around in them, under fleece blankets, and let soups and warm salads like this one ruminate in our bellies this cold weather season!
This Easy Oven Roasted Vegetable Salad with Egg has a way of making you feel all warm and toasty!
Even if you happen not to love beets, roasted beets don’t taste as earthy when they are smothered with a delicious harissa garlic oil.
Not only will this roasted veggie salad warm you up from the inside, but it will nicely balance off the Yule Log and fudge that will follow!

Variations
This oven roasted salad can be made with parsnips, carrots, and cauliflower instead of beets, sweet potato, and broccoli.
To make this vegan, canned chickpeas or black beans can be drained and rinsed and added to these vegetables before they bake for a serving of plant protein, instead of the egg.
Nuts like roasted pistachios or pecans can be tossed in, too.
Instead of harissa, curry powder, garam masala, or any other spice blend you love can also be used.
Recipe Tips
Don’t overcrowd the vegetables. Try and spread them out.
Cut the vegetables into approximately the same size. The smaller they are cut, the quicker they will bake.

Serving Suggestions
This salad can be served with:
Harissa chicken, mango pork chops, maple chili tofu, or this air fryer salmon.
It also pairs well as part of a holiday meal consisting of this spicy honey turkey, yellow rice, spicy sauteed mushrooms, Brussels Sprouts Kale Sauté with Cranberries & Walnuts, Carrot Spinach Croquettes, and pumpkin chutney.

This salad looks so healthy and delicious! I love beets and roasted veggies are my favorite! Hope you and your daughter had an amazing holiday! xo
I never tried roasted beets! This combination of ingredients is definitely completely new to me. Looks scrumptious!
Now there is a welcome change from all the heavy food of the holidays. Love the salad, looks really delicious. Starting a diet this week, it will be on the menu.
This looks fantastic and like a good detoxing from the holidays meal… just pinned to make when I’m back in SF 🙂
Such a beautiful Christmas salad, Shashi! Hoping your holidays are wonderful and that the New Year brings you and your family many blessings! xo
This is such a beautiful salad! :] I don’t know why I always forget that beets exist (I’ve only really ever made something with them once or twice in my life. ._.)
I like that man’s philosophy. I would totally do that if it were feasible for me to do so! Since I cannot, I’ve been living it up in billions of layers and lots of hot soups. 😛
Merry Christmas to you and your family! <3
This would make the perfect Christmas Eve salad… might have to make it happen tonight! Happy holidays! Have a great one and eat lots of cookies! 🙂
Hmmm…if I followed that older gentleman’s motto, then we should have moved out of upstate New York before we ever moved there to begin with! Haha! It’s ok, though. We’ve kinda started embracing the cold…we joined a curling club this year, and we’ve really enjoyed learning how to play the game! But let’s talk about this delicious salad for a minute. I’m not the biggest fan of beets (Laura is), but I absolutely love when they are roasted with other veggies. This salad looks like the perfect way to balance all of the cookies and junk food that always seems to show up at Christmas. Despite how hard I tell myself not to eat all of that stuff…I still do. But that’s what January and soup is for, right? 😉 Merry Christmas, Shashi!
Looks Lovely!! Wishing you and your family a very Merry Christmas!! All the Best! xo Ramona 🙂
Hmmm I like that man’s life motto….

That salad looks and sounds amazing! As far as temperature, I wish I could do something kind of the opposite… like, if the lowest temperature is ABOVE my age, I’d move. I’m loving this cold snap we’re having. 🙂 Hope you have a wonderful holiday!
Haha – Sashi – I have so not been enjoying this weather we have been having – I am ready for summer! 🙂

I SO wish I could be the man (or, um, woman) who could move on a whim! There are times when even gorgeous and comforting beet salads just don’t warm me up from the frozen tundra that is Wisconsin.
Gaaahhhhh – I don’t think even a million dollars would convince me to move to Wisconsin – I just looked y’alls weather up and y’alls highs re supposed to be in the 20’s next week??? Whaaaatttt????
I’m going to show my mum this recipe. She needs to understand that it is possible to prepare hearty salads, full of nutrients and fulfilling too. Needless to day, this is a perfect dish to me. Sri Lanka? It must be a beautiful country. I wish I was there too!
Thanks so much Daniela!
I used to live in Sri Lanka with my parents till I was around 10, yes, it is gorgeous! But, I live in Atlanta – Georgia/U.S.A. these days.
This is my kind of salad, Shashi, I love esp. those roasted beets :-))
