Meatless Meatballs in a Spicy Cauliflower Sauce

About two months ago, when Georgia finally decided to shelter in place, the company I work for, decided to have the graphics department work remotely. So, for the past two months, I have been working from home.
And, I have absolutely loved every moment of it.
I am not going to lie; with the thought of transitioning back to in-office work on Tuesday, I am seriously contemplating going back to full-time blogging again and working from home.
Yes, most of Georgia is in the open backup phase.
But I am still a bit guarded.
So, I plan on hunkering down as much as possible, and that means my daughter and I are going to try to stick with our once-a-week grocery runs. Usually, these runs involve stopping by 2-3 stores to stock up on our favorites.
One of our stops is at Kroger. Recently Kroger has been having a huge sale on their non-dairy ice cream brands, so the frozen foods section is where we head to as soon as we walk through the door.
On our last jaunt by the frozen foods section, we came across a couple of products that were new to us: Garden Inspirations by Farm Rich Meatless Meatballs and Plant-Based BBQ Sliders!
Currently, my daughter and I cycle in a week of vegetarian meals ever so often and I figured these Meatless Meatballs and Plant-Based BBQ Sliders would come in handy during those weeks.
Garden Inspirations by Farm Rich is a brand new line of plant-based frozen foods. They are a delicious way to reduce meat consumption and feel better about what I’m eating. They’re easy to make (microwavable!) and ready in minutes.
The Meatless Meatballs are a “meatless” meatball option for those who don’t eat red meat or want to cut down on it. How to make spicy cauliflower sauce?
I decided to toss the Garden Inspirations by Farm Rich Meatless Meatballs into a spicy cauliflower sauce; a sauce my daughter and I absolutely love!
I start the sauce by first baking a head of cauliflower with an onion and some garlic.
When these are baked through, I add them to a blender along with some grated fresh ginger, coriander, smoked paprika, cumin, turmeric, and vegetable stock.
I blend these into a lusciously creamy sauce, and…
Then toss in some chili flakes for a nice kick, and…
Finally, season with salt and pepper and enjoy!
I must warn you, this spicy cauliflower sauce is finger-licking delicious! There have been times when we enjoyed slurping on spoonfuls of this sauce. And then there are other times when we toss it in pasta or toss some meatless meatballs into it ~ like I did here.

Ingredients
- 1 package Garden Inspirations by Farm Rich Meatless Meatballs
- Cooking oil spray I used an olive oil spray
- 1 head cauliflower
- 1 yellow onion
- 5 cloves garlic
- 2 tsp grated fresh ginger I use a micro-plane grater to grate ginger and lemon zest
- 1 tsp coriander
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp turmeric
- 1 3/4 cups vegetable stock
- 1-2 tsp chili flakes
- salt and pepper to taste
- parsley to garnish
Instructions
- Preheat oven to 400 degrees
- Clean and cut up a head of broccoli and place it on a silpat lined baking tray. Also peel the garlic and onion, chop they roughly and add them to the baking tray with the chopped cauliflower.
- Spray cauliflower, onion and ginger on tray, generously with cooking spray and place into 400 degree oven to bake for 20 minutes.
- While cauliflower is baking, remove the Garden Inspirations by Farm Rich Meatless Meatballs from packaging and prepare them according to package directions. I opted to air fry them o they were slightly crisp on the outside and juicy on the inside.
- Remove cauliflower / onion / garlic from oven and add to a blender along with the grated ginger, coriander, smoked paprika, cumin, turmeric, and vegetable stock. Blend on high until sauce is smooth and creamy.
- Pour/scrape sauce into a saucepan over very low heat.
- Season with salt and pepper to taste.
- Then stir in the chili flakes.
- Add in the Garden Inspirations by Farm Rich Meatless Meatballs and stir well.
- Serve garnished with chopped parsley.

Wow, this entire meal looks delicious, Shashi! Those meatballs sound tasty, and that spicy cauliflower sauce is calling my name for sure. I totally know what you mean about being guarded. New York is slowly opening back up, too, but I’m definitely going to be hanging back to see how things shape up before we go back to “normal.” Hang in there!
