These patties are a fun and unique way to enjoy green peas. The recipe for these Green Pea Patties is a fuss-free one. It involves a handful of ingredients, some boiling and sautéing, a brief stint with a food processor or some hand-mashing and shaping, an encounter with an air fryer, and boom – deliciousness delivered!

These patties are made without any flour or eggs. The binding agent that is holding these patties together is a boiled potato. These simple green pea patties are delicious served with a dipping sauce or slathered with some chutney.

What are the ingredients needed to make these Green Pea Patties?

I used the following 10 main ingredients to make these patties:

Frozen green peas
I always have a bag of frozen green peas in the freezer, and this was my way of doing something fun with them.
Smoked paprika
Ground smoked paprika adds a smoky flavor to these patties. I usually get smoked paprika from Amazon or pick it up at a local grocery store.
Coriander
Ground coriander adds so much flavor and aroma to these patties. You can find coriander at most stores or on Amazon. Coriander can be replaced with cumin or curry powder.
Cayenne
I love a bit of heat to my savory dishes, and cayenne powder is my go-to to achieve that. Cayenne can be replaced with red pepper flakes or chili powder. However, if you prefer a mild patty, the cayenne can be omitted.
Salt
I used iodized salt in this recipe. While I didn’t use any black pepper in this batch, there have been other times when I make these green pea patties when I have added some pepper in as well.
Turmeric
Powdered turmeric was for a bit of added flavor, color, and an amp to the nutritional content of these patties.
Potato
I used a large Idaho potato that had been boiled. You can also use a baked potato.
Onion
I used a red onion. But a yellow onion or a shallot could be used as well.
Ginger
Fresh ginger is my favorite choice for this recipe. If you cannot find any fresh ginger, then powdered ginger would work as well.
Garlic
Like fresh onion and fresh ginger, fresh garlic cloves add flavor and a tantalizing aroma to these patties. If peeling and chopping garlic, onion, and ginger is daunting, then most stores sell pre-peeled and pre-chopped versions of these 3 in their produce section. However, half the amount of garlic powder could be substituted instead.

I also used some olive oil cooking spray on these patties before I air-fried them.

How to make these green pea patties?

So, there are a few hacks or tricks to making these patties. Using a warm boiled (or baked) potato and sautéing the onion, ginger, and garlic helps these patties stick together well and hold their form. With that said, let’s start:

Step 1: Add the frozen peas to a small bowl and fill that bowl with enough water to cover the peas.

Step 2: Boil (or bake) a large potato until it is cooked through. Or, you could also use a leftover baked one if you have one on hand. If you are using a leftover potato that has been in the fridge, place it in a microwave-safe dish and microwave it until it is warmed through. This helps it mash easily. And, I have found that the warm potato sticks together better.

Step 3: When the potato is cooked, place the warm potato in a bowl, and using a fork, mash it up well. However, the chopping and sauteing of the onion, ginger, and garlic can take place simultaneously as the potato cooks.

Step 4: Peel and chop the onion, ginger, and garlic.

Step 5: Add some olive oil to a skillet (or frying pan) and place it over a stovetop set to medium heat.

Step 6: Add the chopped onion, ginger, and garlic to it and saute them for about 8 minutes. When they are ready, add them to the large bowl with the mashed potato.

Step 7: Add in the spices and salt.

Step 8: Drain the green peas and add them in to the bowl as well.

Step 9: Then, mix all the ingredients. I like to do this by hand. Or, you can add this mixture to a food processor and pulse for a few seconds until the ingredients are well blended.

Step 10: Gather up a tablespoon or two of the mixture in your hand and shape it into a circle. Then flatten it so it looks like a patty. Repeat until the mixture is used up.

Step 11: Spray the patties with some cooking spray or brush with some olive oil.

Step 12: Add these patties to the basket of an air fryer that has been preheated to 375 degrees Fahrenheit and air fry for about 15 minutes until they are golden brown.

Recipe Tips

Sautéing the onion, ginger, and garlic not only adds a ton of flavor to these green pea patties, but also makes it easier to form these patties as the sauteed ingredients are softer and more malleable.

If it isn’t already warm, warm the boiled/baked potato before mashing it. I have found that this makes it easier to mash and mix with the other ingredients.

These green pea patties can also be baked in an oven. Place them on a baking sheet and bake them in an oven that has been preheated to 400 degrees Fahrenheit for about 20-25 minutes until they are golden. But I would not suggest trying to fry these. I speak from experience. Once I tried to fry a batch of these, and they fell apart in the heated oil.

Serving suggestions

These green pea patties are delicious on their own.

For a snack, they can also be served with a tasty dip or sauce, like this sweet chili sauce or pumpkin chili sauce. Or, they can also be enjoyed slathered with some mango chutney or fig chutney.

These patties can also be made into a meal by serving them with a salad (like this kale crunch salad) or some roasted vegetables.

Storing leftovers.

If you have leftovers of this small-batch recipe, place them in an air-tight container and store that in the fridge. These should be good for about a week. At least, they have never lasted longer than a week at our home.
