  2. I was disappointed with these pancakes (although my two-year-old wasn’t!). I followed the recipe exactly, and the pancakes were super flat, not at all fluffy. I know my baking powder is fresh, so it wasn’t that. The batter was extremely thin and soupy even after sitting for over 15 minutes. I also thought the cinnamon flavor was much too overt. After making several rounds of super flat pancakes, I added about 1/3 cup brown rice flour, 2 tablespoons flaxmeal, and 3/4 tsp baking powder. After that, they were nice and fluffy.

  3. These are better than regular pancakes. They can get a bit dry if not using syrup though I usually put peanut butter on them 🙂

  4. These turned out great! The whole kitchen smelled amazing! I added extra cinnamon and I believe I didn’t let them sit long enough before cooking because the first four pancakes came out rather thin and this amount actually made 7 or 8 pancakes. while making the first three one at a time the batter began to thicken so the last 4 were thicker and fluffier but they didn’t look s fluffy as yours but I tried to take a short cut and blend the eggs with the milk so I think that had something to do with it. Thank you for the recipe! I was so happy to find an oatmeal pancake recipe that didn’t require bananas 🙂

  7. Just tried these in a locked down South Africa during the Covid-19 crisis (we find ourselves without flour) and this brought some cheer into our kitchen! Delicious (we went savory… unbelievable with caramelized onions, coriander and chopped chillies!).
