Oven Roasted Beets
This easy oven roasted beets recipe calls for only 5 ingredients and results in a tasty side dish that is gluten-free, dairy-free, paleo, and vegan.
I just adore beets. The beautifully ruby-hued root vegetable has made its way into some of the cookies, bars, pizza, dips, burgers, and drinks I have shared on here. I have even shared a recipe using beet greens.
And, I realized, I hadn’t shared one of the simplest ways I love to enjoy them, which is oven roasted.
This recipe for oven roasted beets is an easy one to make. And, it is high in nutrients. In this recipe, beetroot is spiced with a plethora of spices and roasted until fork tender.
What are the ingredients in this oven roasted beets dish?
You will need the following 5 ingredients, plus salt and black pepper to taste:
- Beets
I used 3 raw, large beets for this recipe, not canned beets. You could also use 4 medium beets if you cannot find any large ones, or 5-6 small beets. When handling beets though, if you do not want your hands to be stained red, you might want to wear gloves. - Ground coriander
I love the smoky flavor that coriander exudes to vegetables, so I use it often. It is one of those spices that can be found at most stores. - Smoked paprika
Ground smoked paprika works harmoniously with the coriander. If you prefer to have your beets taste less “earthy” these two spices work well together to tone down beets earthy taste. - Ground turmeric
I used ground turmeric to give this recipe an even heftier nutritional boost. - Olive oil
I used olive oil as I currently have way too many bottles of olive oil hanging out in our kitchen pantry. If you prefer to use another oil instead, such as grape seed oil or avocado oil or vegetable oil, please do so.
Are beets good for you?
I find beetroot to be absolutely delicious. But, I understand that not everyone might think so. So, I though I just might be able to persuade you to try them by sharing their impressive health benefits.
Vibrant beets are said to be packed with vitamins, minerals, and fiber, and are relatively low in calories. High in folate, manganese, magnesium, vitamin C, potassium, and copper, beets can help keep blood pressure in check, improve athletic performance, reduce inflammation, aid in digestion, enhance mental and cognitive functions, and may even have cancer-fighting properties. What is the tastiest way to eat beets?
I love beets – no matter how they are prepared. But, if you don’t like the earthy taste of beets, and want to enjoy them in a savory dish, I have found that dousing them in spices and roasting them makes them quite tasty. Also, cooking them in a well-spiced creamy curry made with a base of coconut milk and tomato paste makes them quite delectable.
When I want to add them to a sweet treat, I usually like to wrap them in aluminum foil and bake them on a sheet pan. Then, purée them and use the purée to make all sorts of baked treats and dips. The natural sweetness of beets has shined in this Chocolate oat cake and these donuts are two of my favorite sweet treats with beets.
Not so long ago, I made a pink chia pudding and a pink mocha. In both of these I used grated beets, and they turned out so delicious.
So, to conclude, I think the tastiest way to eat beets is completely subjective. It depends on if you are trying to enjoy the benefits of beets while masking their taste, or, if you, like me, love the taste of beets.
Is it better to peel beets before or after roasting?
I have found that I prefer to peel beets before I roast them.
No matter if I am baking beets in foil to purée them and use them in a sweet dish or chopping them up to oven roast them, I prefer peeling them with a vegetable peeler first.
Is it better to roast beets or boil them?
My preference is to roast boots. I have found that boiling them seems to reduce their vibrant color. I have read some articles that mention that boiling beets seem to inhibit their nutritional content, but I have no definite proof of this.
However, if you are looking for a natural way to dye your pasta or rice red, you could add a peeled raw beetroot to the rice or pasta and let it boil with them. As it boils, its color will seep into the water, thus coloring the rice and/or pasta, which could make a fun dish for Halloween.
How to roast beets in the oven?
For this recipe, I prefer to peel and cut up the beetroot into bite-sized chunks. I then place the cut beets onto a silpat-lined baking sheet. After that, I toss the spices into the oil and mix well. I take this spiced oil concoction and pour it over the beets. After tossing the beets in the spiced oil, I make sure to spread the beets out well on the baking sheet.
After that, I bake these cut beets at 375 degrees for about 35-40 minutes. This time and temperature has resulted in oven roasted beets that were perfectly tender but not mushy.
What to serve with oven roasted beets?
These oven roasted beets can be served with some spinach, lettuce, carrots, cucumber, chickpeas, peas, and a sprinkle of fresh herbs and feta, in a roasted beet salad.
These spicy beets can also be served with some quinoa or potatoes and other sautéed or roasted veggies, in a healthy bowl.
These beets are so versatile, they can also be served along with some curry and rice.
I have also enjoyed eating these beets on top of a cracker, that had been smeared with some goat cheese, with a light drizzle of honey.
And, there are even times I have had a bowl of these oven roasted beets with some boiled eggs. Yes, that combo sounds really odd – but, I just love it!
