I think my memory-processing center needs a reboot. Last night, my daughter asked me, “mom, hey do you remember those carrot cake cookies you made last Easter?” And, I gotta be honest, I thought I made them a couple of Easters ago.
As far as I can remember (which isn’t too far), Easter Sundays have usually been busy-in-the-best-way for us. Most Easter Sundays have found my daughter and I running around, trying to squeeze in as much time as possible with family and friends in Atlanta before driving back to Athens to try and get ready for Monday.
However, this Easter, things are going to be different. Very diffeent.
For the very first Easter ever, my daughter and I plan on spending Easter Sunday in our pj’s, on our couch, with these carrot cake waffles, these oatmeal pancakes, and a big jar of coffee.
Then, later in the afternoon, we plan on face-timing my mom and sister while enjoying a no-fuss, healthyish Easter meal that might include this Bean Tart and these ginger carrots.
